Of course not! It’s a vegan egg mixture made from ingredients like chickpea and corn flour, black salt, turmeric and garlic powder.⁠

In this dish, the mixture takes on the role of an omelette, elevated with a splash of soy sauce and mirin for that extra umami punch. We served it on a bed of salt and pepper tofu with sautéed bean sprouts and garlic chives.⁠
