Fuel for the Grand Prix weekend

Do you live in Melbourne? Are you heading to the grand prix this weekend to get your fix of fast cars and burning rubber? Then you will need to pack a picnic lunch to see you fuelled for the day’s action.
Over the years, food options at the grand prix have improved somewhat. Of course you are always going to find schnitzel rolls, lamb kebabs, hot dogs and greasy chips but these days you will also find paella, nachos and gourmet delights.

However nothing beats packing your own GP lunch. By packing your own you avoid the cues and control what you are eating so you can drink more beer! No we didn’t really mean that but you have to have a balance, isn’t that right?
Here is our Tarian brown rice salad. An adaptation of a salad we loved when we were working at Wholefoods House in Sydney. The café would make up this salad weekly and I think I had to stop myself from eating it each and every day.
Brown Rice Salad
SERVES: 6-8
PREP TIME: 15 MINUTES
COOKING TIME: 30 MINTUES
INGREDIENTS
2 cups biodynamic medium grain brown rice
1 litre water
½ cup tamari
¼ cup olive oil
½ red onion, diced
½ red capsicum, finely diced
1 medium carrot, grated
Handful unsalted raw pepitas
50g raw almonds
Handful currants
1 bunch parsley, roughly chopped
METHOD
- In a large saucepan, cook the rice in the water or according to the packet instructions. Drain. Add rice to a large mixing bowl and cool in the fridge.
- Remove the rice from the fridge. Mix the remainder of the ingredients to the rice. Serve.
A fresh and fulfilling salad that makes no mess unlike that beetroot salad sandwich you were thinking of eating while watching the action!
