What is your philosophy when it comes to food and how/what we should eat?
I am all about eating ‘real’ food. I try to eat as many whole foods as possible, organic and local wherever possible and generally avoid processed food. I also have a vegetable garden in which I grow pretty much all the veg that my family and I eat. Most things (pretty much everything) we eat at home are cooked from scratch – including all our bread and baked goods (I love baking).

Do you believe we should eat ‘mostly plants’ and if so how much of your diet is made up of plant-based foods?
Plant-based all the way. I have been vegetarian for 5 years and vegan for the past year – and there is no turning back for me. Animal products are a thing of the past for me – I just wish they were for everyone else too. A plant-based diet is the only sustainable and humane diet there is and just by luck, it is also the healthiest and I believe tastiest diet as well!!
Where is majority of your weekly food shop carried out?
I buy a lot of our food in bulk – my pantry is full of grains, beans, flours etc, which I then generally supplement with veg from my garden. I shop in local organic stores for most of our other food needs, and try to buy as little as possible from the mainstream supermarkets.
FITNESS
Where are best places in Australia to spend outdoors running or cycling?
Where isn’t a good place in Australia to spend outdoors? I have lived on the south coast of NSW for the past six years and have loved running along endless beaches but we have now moved to the Southern Highlands. I am having fun exploring all the beautiful trails in the area.
What is the most difficult event you’ve competed in, and why?
Hmmm, toss up between Ironman France – with its grueling hills on the bike, and the 101km Sri Chimnoy run I did in Canberra (whoever said Canberra was flat was wrong!) In France I came off my bike, which was not fun. In Canberra, I got temporarily lost in the bush, which was also not fun! They were difficult like any endurance race, mentally challenging even more so than physically. These kinds of races make you question everything about yourself – but help you to learn what you are really made of…. But that’s why we love them isn’t it?
What is your ‘must have’ fuel come training or race day?
I hate commercial gels, chews etc they make me feel icky, and I hate to think what is in them all. I make my own energy bars and fill my fuel belt bottles with a mix of chia and coconut water… I can run for hours on this.
LIFESTYLE
Who inspires you the most?
That is a really tricky one. My kids inspire me to get going everyday and do the things that I do to keep fit and healthy, but in terms of a role model there are many. I admire people who are working hard to spread the word about plant-based lifestyle like Michael Greger and Colin T Campbell. But there are so many amazing people out there doing amazing things Saleish Rao, John Salley, Dan Buettner.. I could name so many more. On the athletic front, nearly all athletes have me in awe, but the Kenyan distance runners blow my mind.
What is the key to maintaining a healthy work/life balance?
Firstly do something you love, then work is fun too and not a chore. But I think to be realistic about what you can accomplish in a day. Too often I find myself trying to achieve more things than are humanly possible, but still being disappointed with myself at the end of the day because I haven’t gotten through my to do list. I now try to focus on just two or three important things a day, and the rest can just fit in when it can.
If you had all the time in the world, what would you do?
Ahh my fantasy, more time…. I would travel the world, write a few books, spread the message about plant-based eating, become a world famous speaker, open an awesome vegan bakery, do the Ultra Trail du Mont Blanc, and finally finish the crochet blanket I have been working on for the past two years!
