Smashed Herbed Avocado
Ave you had an avo today? This fruit has a high nutrient value even though it is high in fats, healthy fats that is.
The most abundant nutrients in a single 100g serving is: Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6 and Vitamin E. Avocados do not contain any cholesterol or sodium and are low in saturated fat.
An avocado is not only incredibly delicious but they are versatile too. With a creamy rich fatty texture they can be used in smoothies, cakes even chocolate mousse! But we love them the most in this recipe on toast after a solid workout, they are the perfect recovery fuel.

INGREDIENTS
1 large avocado
Handful roughly chopped herbs; flat leaf parsley, dill and coriander
1 tbsp flaxseed oil
Juice 1/2 lemon
1 tsp Meru Miso mild yellow chickpea
1/2 teaspoon sea salt
1 tsp sesame seeds and nori flakes
TO SERVE
Diced fresh red chilli
Toasted seeds; sunflower and pepitas
Macadamia feta cheese
Rocket
METHOD
Place the avocado in a bowl and add the chopped herbs, flaxseed oil, lemon juice, miso, salt, sesame seeds and nori flakes. Mash with a fork to the desired consistency. It can be as chunky or smooth as you like.
Place a good serving on a slice of sourdough toast and garnish with fresh chilli, toasted seeds, macadamia feta and fresh rocket.
SERVING SUGGESTION
We love to serve our smashed avocado on a slice of sourdough but it equally works on a potato rosti for a gluten free option. You can also serve this as a dip with vegetable sticks and corn chips.
