Bircher Muesli
This is a quick and easy recipe, perfect for all busy athletes on the go. You can make a big batch and refrigerate for up to a week, now this has to be the ideal time-friendly breakfast.
This version is loaded with protein, fibre and good fats – the vital nutrients at breakfast time for blood sugar control and the ideal recovery fuel after your morning workout.

Ingredients
1 cup rolled oats
1/2 tbsp chia seeds
1/4 cup sunflower seeds/pumpkin seeds (or a combination of both)
1 tsp sesame seeds
1 cup dairy free milk for soaking
1-2 tbs natural coconut yoghurt (we love Coyo coconut yoghurt)
1 tsp raw rice malt syrup/maple syrup (optional)
1/2 teaspoon cinnamon
1/2 cup slithered or almond flakes
1 tsp shredded coconut
1 grated granny smith apple
1/4 cup goji berries or currants
To serve
Handful fresh berries, papaya or mango
Raw seeds
Chopped nuts
Crunchy granola
Method
Soak the oats, chia seeds, sunflower seeds/pepitas, sesame seeds, milk, coconut yoghurt, maple syrup, cinnamon, almonds and coconut over night in a bowl and stir well to combine. Cover with cling film and leave to soak overnight in the fridge.
The next morning add the grated apple, goji berries/currants and fresh berries or fruit of choice to the soaked oats and mix together in a bowl, texture is thick but smooth and additional milk can be added if thinner consistency is desired. Any left over oats can be stored in the refrigerator for up to a week in a sealed container.
Top it with fresh mint, sprinkle of cinnamon, extra fruit and a crunchy granola.
Some lovely additions/substitutions are grated pear, orange juice, lemon, any dried nuts and fruits – raisins, cranberries, hazelnuts, dates, prunes. This really is a super versatile breakfast.
A NOTE ON CHIA SEEDS
These amazing seeds boost the nutritional value of this breakfast. Chia seeds were the food of choice of Aztec and Mayan warriors, and a single tablespoon would keep them going for 24 hours. They are high in protein, so they’re perfect for breakfast time. They can also be used in smoothies and baking.
