Fried Rice
We are going to let you in on a little secret here, what makes the perfect fried rice? Day old cooked rice. Rice that has had time to cool, rice that is slightly chewy and rice that has texture without being overcooked. This is why you need to use day old rice. You get the perfect texture every time.
Ingredients
15ml sesame oil
80ml tamari
1 inch minced ginger
2 gloves garlic, minced
1 red chilli, sliced
1 small red capsicum, diced
5-6 swiss brown mushrooms, diced
1 bunch asian bok choy, sliced
1 head broccoli, cut into small florets
350g firm tofu, mashed (use fork or hands to mash into ‘chicken-like’ chunks)
4 cups jasmine rice, cooked and cooled (preferably day old cooked rice)
Handful of coriander, chopped
Method
Heat the sesame oil and tamari in a large frying pan over a high heat, then add the ginger, garlic and chilli and fry quickly. Add all the vegetables and tofu and fry until they begin to soften.
Stirring quickly, add the rice and mix until well combined. Throw in the coriander and serve while hot.
Serves 4-6
